Recipe I'm Loving:
I’m always on the hunt for fresh, simple, nutrient packed meals and when I came across this carrot salad that also had a good amount of protein I just had to make it. It is so simple (4 ingredients with little to no prep), tastes delicious, and naturally contains beta-carotene, fiber, and antioxidants. I have been eating it on repeat and know you will love it too!
Carrot Salad Recipe:
Ingredients:
- 6 carrots, peeled into ribbons
- 3-4 tbs olive oil
- 2 tbs red wine vinegar
- 160 grams crumbled feta
directions:
Mix all of the ingredients together - sprinkle with salt - enjoy!
Entertainment I'm Loving:
If you haven’t started watching Love Story John F. Kennedy Jr. & Carolyn Bessette what are you waiting for!? I’m taking it all with a grain of salt when it comes to historical accuracy, but when it comes to watching it like a fashion and beauty anthropologist I am absolutely devouring it. The 90’s simplicity of the hair, makeup and skin is highly inspiring. I love the clean skin, dark lash lines, and pops of lip colour but no heavy contour or highlight. The fashion is simple, elegant and well fitting - something that is coming back heavily for spring.

Find of the Week:
I have been on the hunt for beautiful outdoor melamine plates and serveware - I found a stunning brand but of course it’s now all sold out. Along my hunt I came across this brand that makes gorgeous china-inspired paper plates. Non-committal, colourful, un-breakable! I will be ordering a bunch of these to play with outdoor dining this spring and summer!
