Why this salad glows: Carrots are loaded with beta carotene which converts to Vitamin A in the body — one of the most powerful nutrients for skin cell renewal and radiance. Avocado delivers Vitamin E and healthy fats that support your skin barrier. Turmeric contains curcumin, a potent anti-inflammatory that protects collagen. Pumpkin seeds are rich in zinc, which regulates oil production and supports skin healing. Lemon brings Vitamin C for collagen synthesis. Every ingredient is doing something for your skin.

Roasted Carrot & Avocado Salad with Turmeric Honey Dressing

Ingredients:

  • 4 carrots, peeled and halved lengthwise
  • 2 tablespoons olive oil
  • 1 avocado, sliced
  • 2 cups mixed greens or arugula
  • 3 tablespoons pumpkin seeds
  • 2 tablespoons fresh lemon juice
  • 1 teaspoons raw honey
  • 0.5 teaspoons ground turmeric
  • 2 tablespoons extra virgin olive oil
  • 1 flaky sea salt and black pepper
1) Roast the carrots: Preheat your oven to 425°F. Toss 4 carrots, peeled and halved lengthwise with 2 tablespoons olive oil and a generous pinch of 1 flaky sea salt and black pepper. Spread on a baking sheet and roast until caramelized at the edges and tender all the way through — about 20 minutes. They should look a little golden and slightly charred. That's what you want.

2) Make the dressing: Whisk together 2 tablespoons fresh lemon juice, 1 teaspoons raw honey, 0.5 teaspoons ground turmeric, and 2 tablespoons extra virgin olive oil until smooth and glossy. Taste it — it should be bright, slightly sweet, and have that warm turmeric depth underneath. Adjust with a little more lemon or honey as needed.

3) Toast the seeds: While the carrots are roasting, toast 3 tablespoons pumpkin seeds in a dry pan over medium heat for 2–2 minutes until they start to pop and turn golden. Watch them — they go from perfect to burnt quickly.

4) Assemble: Arrange 2 cups mixed greens or arugula on a plate or shallow bowl. Lay the warm roasted carrots over the top, then fan out 1 avocado, sliced alongside. Scatter the toasted 3 tablespoons pumpkin seeds over everything. Drizzle generously with the turmeric honey dressing and finish with a pinch of 1 flaky sea salt and black pepper.

5) Serve: Serve immediately while the carrots are still warm — the contrast of warm carrots and cool avocado is the whole point. Eat it slowly. This one deserves it.
