Beauty I'm Loving:
Inner Glow is absolutely saving my skin (and hair!) right now. With the temps dropping and indoor heating sucking the moisture out of our skin, we need to create a protective barrier to keep all of our skincare products locked into our skin. Inner Glow will help combat fine lines, dehydration and even brighten dark spots. Apply before bed to wake up glowing.
Recipe I'm Loving:
I have been making these date snickers bars on repeat! Clean ingredients, bursting with flavour, they totally hit that holiday sweet tooth that just wont quit. Made from ground peanuts, almonds, peanut butter, dates and maple syrup - they’re a delightful treat packed with nutritious ingredients.
Healthy Snickers Bar Recipe:
Original Recipe from Elle Gibson
Nougat Layer:
1 cup roasted peanuts (Salted is great if you enjoy a sweet and salty combo)
1 1/2 cups ground almonds
2 tbs peanut butter
4 tbs agave (I prefer maple syrup)
2-3 tbs coconut oil
pinch of salt
For the Caramel:
1 1/2 cups dates
2 tbs peanut butter
3-4 tbs agave or maple syrup
1 tbs coconut oil
pinch of salt
Coating:
200g melted chocolate
Directions:
Add peanuts and ground almonds into a food processor, mix until you get a fine texture. Then add the peanut butter, agave, coconut oil and a pinch of salt. It should make a soft nougat-like dough. Press this into a parchment paper lined dish (loaf pant, 8x8 pan - whatever you have!)
For the caramel, add dates (medjool is best), coconut oil, agave, salt and peanut butter into food processor and mix until you get a caramel texture. Spread this on top of the nougat layer in your pan. Press peanuts into the top of the caramel layer. Let sit in the fridge for a few minutes until it hardens. Remove from the pan and slice into bars.
Melt chocolate of your choice, then submerge bars into the chocolate and coat them. Drizzle with white chocolate, crushed peanuts, and a sprinkle of salt (if you feel like it).
Entertainment I'm Loving:
As we enter this busy season - inundated with sales, gifting, parties - I want to reserve time to unrot my brain. There was a time where I would devour books like candy, now I feel like I can barely get through a few chapters. I miss being deeply curious about obscure topics, getting lost debating a plot line with friends. Now we scroll, lose our train of thought mid-conversation, and forget facts we used to know by heart. Here are some ways we can unrot our brains and by proxy return to ourselves a bit: read like a kid (curious, unselfconscious), pick a new hobby that requires focus, put your phone away, let yourself be bored. Here is a book I’m challenging myself to read: “A Short History of Nearly Everything”. It’s a deep dive into how everything we know came to be.
