Recipe I’m Loving
I made this simple but absolutely delicious recipe when my mom was in town and we are both soooo obsessed now! It hits the mark when you’re craving sushi but don’t have a good restaurant accessible. It’s the perfect little lunch that you must try! You can also sub any toppings you'd like - imitation crab, salmon, tuna, cucumber. Go crazy!
First, start by making sushi rice - this recipe for making it in the instant pot is amazing, and the seasoning is perfection.
To assemble:
- Take a seaweed "snack" and place sushi rice down the centre
- Add a smear of spicy mayo (kewpie mayo + sriracha)
- Sprinkle sesame seeds on top
- Finish with a slice of avocado
- Dip into soy sauce and enjoy!
