A Moment I’m Celebrating

I am celebrating having my whole family with me for the holidays! I can’t tell you how many years it has been since we’ve all been under one roof. I will be cooking up an absolute storm these next few days so I thought I would dedicate this edition to all of my favorite recipes and you can refer back whenever you’re in a pinch!

 

Christmas Morning:

You wake up, the presents are torn open, and now you have wide eyes staring at you like “WHAT’S NEXT?!” Enter these absolutely delicious cinnamon buns that are made from scratch but don’t take a ton of work or special equipment. You can even make them the night before so they’re ready to pop in when the morning lull hits. They are seriously impressive.

 

The Perfect Side Dish:

My mashed potato recipe receives major praise whenever I whip it out (literally). It combines all things that add up to a delicious, decadent, holiday meal: butter, salt, and lots of love!

Ingredients: 

6 Yukon gold potatoes, peeled and sliced

1.5 cups cream

1 sprig rosemary

4-6 cloves garlic, peeled, smashed

1/4 cup sour cream

6 tbs butter

salt and pepper to taste

Directions

1.  Simmer the cream, garlic, rosemary and butter over the lowest possible heat - this will infuse the cream with all of these flavors. 

2. Cook potatoes in InstantPot (8 mins on high pressure, manual release), or boil in a pot until tender

3. Drain potatoes and do an initial mashing. Remove rosemary sprig from cream mixture and break up garlic in the pot. 

4. Add cream mixture into mashed potatoes, then add sour cream, salt and pepper. Mix until combined, but avoid over-mixing, which will cause stiff mashed potatoes. 

The Morning After:

You’ve cooked, eaten, and wrapped your heart out and need to feel a little balanced the next day: enter this granola recipe. it is so perfect in a parfait but honestly I devour it on its own and gift it to people who I know will also appreciate its rich, sweet, salty goodness! You really can’t go wrong with this recipe!
