If you’re like me, you’ve been thoroughly enjoying the end of summer tomato bounty but also probably wondering, what do I do with all of these tomatoes!? Enter the gourmet tomato sandwich recipe. Soft egg bread, a luscious swipe of mayo, a juicy slice of tomato, but wait... A sprinkle of furikake seasoning for the perfect hit of umami! This simply delicious recipe will impress your taste buds.
The Best Tomato Sandwich Recipe
Yield: 2 sandwiches
- Salt and black pepper
- 1 large ripe heirloom tomato, sliced thick
- 4 slices soft white sandwich bread (milk bread, challah or brioche work best)
- Kewpie mayo, for spreading
- Furikake seasoning, for sprinkling
How to make it
- Season the tomato slices generously with salt and pepper. Toast the bread until just golden.
- Spread a good layer of mayo on all four slices, then sprinkle each one with furikake. Layer the tomato onto two slices and top with the remaining bread.
- Slice on the diagonal and eat right away, while the toast still has some crunch.
Tip: No furikake on hand? Pulse one sheet of roasted seaweed with a teaspoon of kosher salt and a half teaspoon of sugar in a mini food processor until fine, then mix in two teaspoons of sesame seeds (or everything bagel seasoning) and a small pinch of MSG. It's also great scattered over rice, roasted veggies, or a fried egg.

There's a particular kind of September evening: still warm enough for the windows open, but with that first hint of something shifting in the air, when I start easing into my fall watchlist a little early. Gilmore Girls plays in the background while I'm moving around the kitchen, You've Got Mail and When Harry Met Sally have me watching New York go gold on screen before it's even started here, and with a new Practical Magic on the way, I went back to the original; that big drafty Owens house, midnight margaritas, Sally in her cardigan, and I remembered why it's the perfect almost-fall movie: it never treats the season like an ending, just an invitation to shift. I'm not ready to say goodbye to summer so much as I'm ready to light a candle and let the two seasons overlap for a while.

There is something about fall that makes me want to redecorate my entire bedroom, but alas, I’ll settle for an incredible new sheet set. I have been loving crisp, organic, percale sheets and found the perfect colourway on Quince. Mixing the dusty rose (Fig) fitted sheet set + the burgundy duvet cover, and a burgundy velvet lumbar pillow creates a gorgeous tone on tone bedding combo. I don’t like my sheets to be too dark (it gives frat house and draws too much darkness to the bed) but using a light fitted sheet set and having the darker duvet folded at the bottom of the bed is a perfect mix of classic and cozy.
