The Best Tzatziki Recipe

I absolutely LOVE a good tzatziki recipe and I had to try a few before finding this gem. It's the perfect balance of fresh and tangy, creamy yet light. I love using it for my mediterranean dinner medleys (greek chicken, roasted veggies and warm pita), dipping fresh raw veggies into it and this may be odd but its so perfect to dip plain Lay's chips into!

Ingredients: 

  • ½ cup finely grated cucumber
  • 1 cup whole plain greek yoghurt 
  • 1 tablespoon lemon juice
  • ½ tablespoon olive oil
  • 1 garlic clove, grated
  • ¼ teaspoon salt
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon chopped fresh mint, optional

Instructions:

  • Place the cucumber on a towel and gently squeeze out a bit of the excess water. My preference: placing it in a thin mesh strainer and gently pressing the water out.
  • In a bowl, combine the cucumber, yogurt, lemon juice, olive oil, garlic, salt, and dill. Chill until ready to use.
