Once you make homemade hummus, there is absolutely NO going back! It's easy, it tastes so much better, and you can go crazy on different toppings and flavours. Trust me, you will absolutely love it!!
Ingredients:
- 1 can chickpeas (you can use dried as well - it's even better if you do!)
- 1/2 teaspoon baking soda (only if using canned)
- 1/4 cup lemon juice
- 1 clove garlic
- 1 tsp salt
- 1/2 cup tahini
- 1-4 tbs cold water
- 1/2 tsp cumin
- 1 tbs olive oil
- Garnish options: really good olive oil, paprika, zhoug, parsley, pine nuts, roasted red peppers
Instructions:
- Place chickpeas in a pot and add baking soda. Boil for about 20 minutes, until chickpeas are bloated, skins are falling off, and they're quite soft. Drain chickpeas and run under cool water. Set aside.
- Combine lemon juice, garlic and salt in a blender or food processor. Process until everything is finely chopped - allow it to rest for about 10 minutes so the garlic has time to mellow.
- Add tahini and blend until mixture is creamy.
- While running, drizzle in 2tbs water. Blend until smooth, pale and creamy.
- Add cumin and the chickpeas - drizzle in olive oil while blending. Blend until super smooth. Add extra water as needed to achieve desired texture.
- Top with your garnish of choice!
