Mandy's Veggie Power Bowl with Green Power Dressing Recipe

Bowl Ingredients:

1 cup quinoa

1/2 cup shredded kale

1/2 avocado diced

1/4 cup drained chickpeas

1/4 cup drained corn

1/4 cup red cabbage

1/4 cup diced red pepper

1/4 cup sliced scallion (green only)

1/4 cup cubed feta

2 tablespoons cilantro

2 tablespoons torn basil

1/3 cup green power dressing 

Dressing Ingredients:

This part is kinda annoying but worth it - we're going to make two dressings and mix them together:

Tamari Dressing:

Slightly under 2/3 cup apple cider vinegar

2 tablespoons tamari

1 clove garlic

1/2 cup nutritional yeast flakes

1 cup + 3 tablespoons olive oil

blend all ingredients together in a blender except for the olive oil. Once it's well blended, slowly drizzle in the olive oil while the blender is running. 

Green Goddess Dressing:

2 tablespoons chopped scallion (white only)

1/4 cup packed basil

1/2 cup parsley 

1/4 cup tarragon 

1/4 apple cider vinegar 

1 teaspoon dijon

1/2 cup olive oil

Do the same as above - blend everything except the oil then drizzle it in when it's on

Next, mix 1/2 cup of each dressing and mix into the salad!
